// Tofu Mom

I’m probably not the typical “Seattle Mom” type of blogger)… I’m an overweight-over-40-something, grey-haired, tie-dye-wearing, newly-single, low-income VEGAN Mom to three wonderful (and vegetarian) kids. (Two teens and a seven-year-old - all girls.)

I’m a special education teacher-assistant and work with autistic students in the Public School system. I love my job!! I also love gardening, cooking, (vegan food obviously) and WOW-ing people with yummy stuff that they never realize is animal-free. I can’t guarantee it’s always “healthy” (vegans can overdose on cookies too!) but it’s fresh, creative, interesting and tasty!!
My kids are the most important thing in my life however, and we spend a lot of time with school, extra-curricular activities, sports and church activities. We don’t have a LOT of free time, but do manage some very frugal family activities around the Puget Sound area as well as volunteering at an animal shelter and Special Needs food bank. Somewhere in there I’m taking a couple classes too!

I usually blog about food, vegan recipes, cooking with my kids, ways to get kids to eat their veggies (and fruit and whole grains…), our pets and whatever else I feel like saying about my family. Let me know if you get sick of hearing about vegetables!
